The grapes are picked during the second half of September and immediately pressed and the juice cooled, cleaned and stocked.
During the partial fermentation process this wine takes up a little effervescence and froth creating a decidedly sweet, delicious and aromatic wine.

Braida Brachetto d’Acqui DOCG, Italy - 5%

intense pink colour, fine mousse. Lush aroma, fragrant and aromatic, intense red fruit and strawberries. A sweet, soft and delicate taste with refreshing aromatic finish. Accompanies chocolate-coated strawberries, wild berries, and goes well with dried fruit, walnuts, hazelnuts, almonds, pistachios and figs. The most traditional association, with a dessert after the meal or mid-afternoon, is with dry pastries and with oven baked sweets, from Christmas Panettone to jam tarts. Brachetto d’Acqui is one of the few wines throughout the world which can be matched with dark chocolate.

Ulupna Shiraz/Cabernet Sauvignon Cellar Reserve 2014, Goulbourn Valley, Australia - 14.6%

Deep ruby with purple hues. A myriad of black fruit aromas rise out of the glass – black cherries, black plums, blackberries with overtones of liquorice and dark chocolate. Strong intense fruit sits within a fine tannin structure. Peak drinking window of 2015 – 2025.

Ulupna Royal Phoenix 2013, Goulbourn Valley, Australia - 15.1%

Bright, deep pink-purple. Moderate chocolate, with plums and cooked raspberries over light vanilla on the nose, flavours of raspberries and light chocolate with light, very fine tannins. Dry, moderate to high acid and alcohol precede an exceptionally long length.
